Easy Protein Pancakes

Tasty Protein Pancakes

These thick and fluffy protein pancakes make a healthy and wholesome breakfast. No flour, high fiber, and ready in minutes!

SERVINGS: 8 single pancakes

COOK TIME: 5 minutes

TOTAL TIME: 6 minutes

Ingredients:

  • 1 cup rolled oats

  • 2 1/4 teaspoons baking powder

  • 1/2 cup protein powder

  • 3 small eggs

  • 1/3 cup Greek yogurt

  • 1/3 cup milk or milk beverage

  • 1/4 teaspoon vanilla extract

  • 1 tablespoon maple syrup

  • 1 tablespoon coconut oil

Instructions:

  1. Blend Oats: Blend the oats in a blender or food processor until they reach a flour-like texture.

  2. Mix Ingredients: Add the remaining ingredients to the blender and blend until smooth, it will be a little thick.

  3. Cook Pancakes: Heat a non-stick skillet over medium-high heat and add a small amount of oil. Drop ¼ cup portions of the batter onto the skillet.

  4. Flip and Cook: Cook the pancakes until bubbles appear on the surface, then flip and cook for another minute.

  5. Repeat: Continue until all the pancakes are cooked.

Notes:

  • To Store: These pancakes keep well in the refrigerator for 4-5 days.

  • To Freeze: Freeze pancakes separately, keeping wax paper in between, or wrap them individually and freeze for up to 1 month.

  • To Reheat: Heat the pancakes in the microwave for 10-20 seconds and enjoy warm.
